Homemade Granola

Ingredients:

4 cups organic rolled oats

3 cups combo of favorite nuts and seeds (I used raw walnuts, almonds and pumpkin seeds)

1 tsp sea salt

1 tsp ground cinnamon

¾ cup pure maple syrup

½ cup extra virgin olive oil

2 tsp vanilla extract

½ cup unsweetened coconut flakes

 

1. Preheat oven to 350°. Line a baking sheet with parchment. In a large bowl, combine first four ingredients.

2. In a small bowl combine syrup, oil and vanilla. Pour into dry mixture and combine well.

3. Spread out granola on baking sheet, patting down until even, and bake 10 minutes.

4. Stir in coconut, re-spread evenly across pan, and bake another 10 minutes.

5. Let cool completely before storing.
