Sweet Potatoes are a Superfood

On the scale of amazingly healthy foods, sweet potatoes are right up there with blueberries, avocados and broccoli. The orange-flesh variety are jam-packed with beta carotene which the body converts into vitamin A. Beta carotene is an antioxidant—a substance that inhibits the oxidation of other molecules and protects the body from free radicals. Damage caused by free radicals can lead to chronic illnesses. All good reasons not to save these spuds for special occasions. 

Sweet potatoes are also high in vitamins C and B6, and a great source of manganese, potassium and protein. Plus the fiber and antioxidants in sweet potatoes are excellent for gut health. Here’s more about what all of those vitamins and minerals can do for you:
